  • 1 Lb spicy sausage casing removed
  • 1 Tbsp olive oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 Cup long-grain white rice
  • 2 Cup chicken broth
  • 1 Tsp paprika
  • ½ Tsp dried thyme
  • ½ Tsp dried oregano
  • ¼ Tsp cayenne pepper adjust to taste
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish

Instructions
 

  • Heat a large skillet or Dutch oven over medium-high heat. Add the sausage, breaking it up into smaller pieces with a wooden spoon. Cook until browned and cooked through. Remove the sausage from the skillet and set aside.
  • In the same skillet, add the olive oil and heat over medium heat. Add the onion, garlic, red bell pepper, and green bell pepper. Sauté until the vegetables are tender, about 5 minutes.
