  • 2 Sheet sheets of store-bought puff pastry thawed
  • 14 Oz good quality sausage meat
  • 1 small onion finely chopped
  • 1 clove of garlic finely chopped
  • 1 Tsp dried thyme
  • 1 Tsp dried sage
  • Salt and pepper
  • 1 egg beaten

Instructions
 

  • Preheat the oven to 400°F. Line a baking tray with parchment paper.
  • In a mixing bowl, combine the sausage meat, onion, garlic, thyme, sage, salt and pepper. Mix well with your hands until everything is evenly combined.
  • On a lightly floured surface, roll out the puff pastry sheets to a thickness of about 1/8 inch.
  • Divide the sausage mixture into two portions, and form each into a long sausage shape the same length as the pastry sheets.
  • Place each sausage shape onto the pastry, then brush the edges of the pastry with beaten egg.
  • Roll the pastry up around the sausage meat and press the edges together to seal. Repeat with the other sausage and pastry sheet.
  • Cut each sausage roll into six pieces and place them onto the prepared baking tray.
  • Brush the tops of the sausage rolls with more beaten egg and sprinkle with a little more dried thyme.
  • Bake the sausage rolls in the preheated oven for 25-30 minutes, or until they are golden brown and cooked through.
  • Remove from the oven and allow to cool for a few minutes before serving.
