- 2 Cups dried red kidney beans
- 4 Tbsp olive oil
- 1 onion chopped
- 4 cloves garlic minced
- 1 carrot diced
- 1 chorizo sausage sliced
- 4 Cups chicken or vegetable broth
- 2 bay leaves
- 1 Tsp paprika
- 1 Tsp ground cumin
- Salt and pepper to taste
- Fresh parsley chopped (for garnish)
Instructions
- Rinse the dried kidney beans and soak them overnight in a large bowl of water. Drain and rinse before using.
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrot, and chorizo sausage. Cook for about 5 minutes until the vegetables are softened and the chorizo is slightly browned.
