Ingredients
  

  • 1 Lb ground lamb
  • 1 small onion finely chopped
  • 2 cloves of garlic minced
  • 2 Tbsp finely chopped fresh cilantro
  • 2 Tbsp finely chopped fresh parsley
  • 1 Tsp ground cumin
  • 1 Tsp ground coriander
  • ½ Tsp ground cinnamon
  • ½ Tsp ground ginger
  • ½ Tsp paprika
  • ¼ Tsp cayenne pepper adjust to taste
  • Salt and pepper to taste
  • Natural sausage casings optional
  • Olive oil for cooking

Instructions
 

  • In a large mixing bowl, combine the ground lamb, chopped onion, minced garlic, cilantro, parsley, cumin, coriander, cinnamon, ginger, paprika, cayenne pepper, salt, and pepper. Mix well until all the ingredients are thoroughly combined.
  • If you’re using sausage casings, soak them in water according to the package instructions to soften them.
  • If not using casings, shape the lamb mixture into small sausage patties or kebab shapes. If using casings, attach a sausage stuffer to your sausage casings and stuff the lamb mixture into the casings, tying off the ends securely. Twist the sausages into 4-5 inch links.
  • Heat a large skillet or grill pan over medium heat and add a drizzle of olive oil. Once hot, add the lamb sausages and cook for about 4-5 minutes per side, or until browned and cooked through.
  • Alternatively, you can grill the sausages on a preheated grill over medium heat until cooked through, usually 12-15 minutes, turning occasionally.
  • Once cooked, remove the sausages from the heat and let them rest for a few minutes before serving.
