  • Pinch of salt
  • 1/4 cup ice water

For the mincemeat filling:

  • 1 cup currants
  • 1 cup raisins
  • 1 cup sultanas
  • 1 cup chopped peeled apples
  • 1/2 cup beef suet finely chopped
  • 1 cup dark brown sugar
  • Zest and juice of 1 orange
  • Zest and juice of 1 lemon
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon allspice
  • 1/4 cup brandy

Instructions
 

  • In a large bowl, combine flour, butter, sugar, and salt. Rub the mixture with your fingertips until it resembles breadcrumbs. Add ice water and knead to form a dough. Wrap in plastic wrap and chill for 30 minutes.
  • Preheat the oven to 375°F (190°C).
  • For the mincemeat filling, mix all the filling ingredients in a large bowl. Let it sit for at least 30 minutes to allow the flavors to meld.
  • Roll out the chilled pastry on a floured surface and cut out rounds for the pie bases and smaller rounds for the pie lids.
