Mediterranean inspired feta slaw
Ingredients
- 1 small head of green cabbage thinly sliced
- 1 medium red bell pepper thinly sliced
- 1 medium cucumber seeded and julienned
- ½ red onion thinly sliced
- 1 Cup cherry tomatoes halved
- ½ Cup pitted Kalamata olives halved
- 4 Oz feta cheese crumbled
- ¼ Cup chopped fresh parsley
- ¼ Cup chopped fresh mint
For the dressing:
- ⅖ Cup extra virgin olive oil
- 2 Tbsp red wine vinegar
- 1 Tbsp freshly squeezed lemon juice
- 1 Tsp Dijon mustard
- 1 clove garlic minced
- ½ Tsp dried oregano
- Salt and black pepper to taste
Instructions
- In a large bowl, combine the sliced cabbage, red bell pepper, cucumber, red onion, cherry tomatoes, and Kalamata olives. Toss well to mix the vegetables evenly.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, minced garlic, dried oregano, salt, and black pepper. Adjust the seasoning to your taste.
