Ingredients
  

  • 1 small head of green cabbage thinly sliced
  • 1 medium red bell pepper thinly sliced
  • 1 medium cucumber seeded and julienned
  • ½ red onion thinly sliced
  • 1 Cup cherry tomatoes halved
  • ½ Cup pitted Kalamata olives halved
  • 4 Oz feta cheese crumbled
  • ¼ Cup chopped fresh parsley
  • ¼ Cup chopped fresh mint

For the dressing:

  • Cup extra virgin olive oil
  • 2 Tbsp red wine vinegar
  • 1 Tbsp freshly squeezed lemon juice
  • 1 Tsp Dijon mustard
  • 1 clove garlic minced
  • ½ Tsp dried oregano
  • Salt and black pepper to taste

Instructions
 

  • In a large bowl, combine the sliced cabbage, red bell pepper, cucumber, red onion, cherry tomatoes, and Kalamata olives. Toss well to mix the vegetables evenly.
  • In a separate small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, minced garlic, dried oregano, salt, and black pepper. Adjust the seasoning to your taste.
  • Pour the dressing over the slaw mixture and toss until all the vegetables are coated.
  • Let the slaw marinate in the refrigerator for at least 30 minutes to allow the flavors to meld together.
  • Just before serving, sprinkle the crumbled feta cheese, chopped parsley, and chopped mint over the slaw. Gently toss to combine all the ingredients.
  • Taste and adjust the seasoning if needed.
  • Serve the Mediterranean-inspired feta slaw chilled and enjoy!
