Hot crossed buns
Ingredients
- 1 Lb plain flour
- 2 Oz caster sugar
- 2 Pkg dried yeast 2 pkg.
- 1/2 Cup lukewarm milk
- 1/2 Cup lukewarm water
- 1 Tsp salt
- 1 Tbsp mixed spice see directions
- 2 Oz melted butter cooled
- 1 whole egg lightly beaten
- 2 Oz currants
- 2 Ozz mixed candied peel
- 2 Tsp clear honey
- 1 Oz plain flour for cross
- – Mixed spice:
- 1.25 Tsp cinnamon
- 1/2 Tsp nutmeg
- 1/4 Tsp cloves
Instructions
- Mix 1 oz flour with 1 tsp. sugar and yeast. Stir in milk and water, cover, and leave in a warm place for 20 minutes or until puffed up and frothy.
- Sift the remaining flour and sugar with salt and mixed spice. Make a well in the center and add butter, egg, and yeast mixed with sugar.
- Mix to a dough and knead for 10 minutes.
- Place the dough in a clean bowl and cover with cling film. Leave in a warm place until doubled in size.
- Knock back the risen dough, then knead in currants and candied peel.
- Divide the dough into 12 equal pieces and knead each one into a smooth ball.
- Place the balls on a greased baking sheet, cover with film, and leave to rise in a warm place for 45 minutes to 1 hour, or until doubled in size.
- Decoration:
- Blend flour with enough cold water to make a paste.
- Fill a small piping bag with the paste and pipe a cross over each bun.
- Bake at 425°F for 20 minutes.
- Remove the buns from the oven and glaze with honey. Return to the turned-off oven for 3 minutes.
- Leave the buns on the baking tray for 2 minutes, then cool on a wire rack.
