Ingredients
  

  • 6 Cups fresh corn kernels about 8-10 ears of corn
  • 4 slices bacon diced
  • 1 medium onion diced
  • 2 celery stalks diced
  • 2 medium potatoes peeled and diced
  • 4 Cup chicken or vegetable broth
  • 2 Cups whole milk
  • 1 Cup heavy cream
  • 1 Tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish, optional

Instructions
 

  • In a large pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon grease in the pot.
  • In the same pot, add the diced onion and celery. Sauté until they become translucent and lightly browned, about 5 minutes.
  • Add the diced potatoes, corn kernels, dried thyme, and bay leaf to the pot. Stir well to combine the ingredients.
  • Pour in the chicken or vegetable broth, and bring the mixture to a boil. Reduce the heat to medium-low and let it simmer for about 15-20 minutes, or until the potatoes are tender.
  • Remove the bay leaf from the pot. Using an immersion blender or a countertop blender, puree about half of the soup until creamy, while leaving some chunks for texture.
  • Return the pot to the stove over low heat. Stir in the milk and heavy cream. Season with salt and pepper to taste. Simmer for an additional 5 minutes, stirring occasionally.
