  • 1/2 Tsp insta cure #1
  • 1/2 Tsp pepper
  • 1 Cup clarified butter

  • 1. Preheat sous vide to 154 °F / 68 °C.
    2. In a skillet over medium heat, cook the bacon and onions until they are soft and translucent.
    3. Add the brandy to the pan and boil for about one minute, stirring occasionally. Turn off the heat and let it rest for about 10 minutes to infuse flavors.
    4. In a blender, combine the cooked bacon, onions, and the remaining ingredients listed above. Blend just until smooth, making sure not to overcook the livers during this step.
    5. Slowly add the clarified butter to the blender while continuing to blend, ensuring the mixture stays emulsified.
