Canadian lumberjack soup
Ingredients
- – 1 lb 450g bacon, diced
- – 1 large onion chopped
- – 4 cloves of garlic minced
- – 4 medium carrots peeled and diced
- – 4 celery stalks diced
- – 4 medium potatoes peeled and diced
- – 8 cups 2 liters chicken or vegetable broth
- – 1 can 14 oz diced tomatoes
- – 1 cup 240ml heavy cream
- – 2 cups 240g fresh or frozen corn kernels
- – 2 cups 240g chopped kale or spinach
- – Salt and pepper to taste
- – Fresh parsley chopped (for garnish)
Instructions
- In a large pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon using a slotted spoon and set it aside, leaving the bacon fat in the pot.
- In the same pot with the bacon fat, add the chopped onion and minced garlic. Sauté for 3-4 minutes until the onion becomes translucent.
- Add the diced carrots, celery, and potatoes to the pot. Stir well and cook for another 5 minutes.
