Ingredients
  

  • 4 ripe bananas sliced
  • 6 large eggs
  • ½ Cup heavy cream
  • ¼ Cup granulated sugar
  • 1 Tsp vanilla extract
  • ¼ Tsp ground cinnamon
  • ¼ Tsp salt
  • 2 Tbsp unsalted butter
  • 2 Tbsp brown sugar
  • 1 Tbsp Dark rum Like Goslings Black Seal
  • Powdered sugar for dusting

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a bowl, whisk together eggs, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.
  • Melt the butter in a 10-inch oven-safe skillet over medium heat. Add the brown sugar and stir until it dissolves.
  • Add the sliced bananas to the skillet and cook for 2-3 minutes until they caramelize slightly.
  • If using rum, carefully pour it over the bananas and let it cook for another minute to evaporate the alcohol.
  • Pour the egg mixture over the bananas in the skillet, gently stirring to distribute the bananas evenly.
  • Cook on the stovetop for about 2 minutes or until the edges begin to set.
  • Transfer the skillet to the preheated oven and bake for 12-15 minutes or until the frittata is set in the middle.
  • Remove from the oven and let it cool for a few minutes.
  • Dust the top with powdered sugar before serving.
