Ingredients
  

  • 2 Cups sushi rice
  • 2 ¼ Cups cups water
  • Cup rice vinegar
  • 2 Tbsp granulated sugar
  • 1 ½ Tsp salt

Instructions
 

  • Rinse the sushi rice in cold water until the water runs clear. Drain the rice well.
  • In a medium saucepan, combine the rinsed rice and water. Bring to a boil over high heat.
  • Reduce the heat to low, cover the saucepan, and let the rice simmer for 15 minutes. Remove from heat and let it sit, covered, for an additional 10 minutes.
  • In a small saucepan, combine the rice vinegar, sugar, and salt. Heat the mixture over low heat until the sugar and salt dissolve completely.
  • Transfer the cooked rice to a large bowl or a wooden sushi rice tub. Gradually pour the vinegar mixture over the rice while gently folding and mixing it with a spatula or wooden paddle.
  • Continue folding and mixing the rice until the vinegar mixture is evenly distributed and the rice is well-coated.
  • Cover the bowl or tub with a clean damp cloth to keep the rice moist until ready to use.
