Ingredients
  

  • 2 Tbsp olive oil
  • 1 Tsp paprika
  • 1 Tsp oregano
  • 2-3 dried tomatoes
  • 4 Tsp capers
  • 2 Oz black olives sliced thinly
  • 1 Tsp fresh parsley chopped thinly
  • 1 Lb fresh Tuna cubed
  • 10 cloves garlic finely chopped
  • 2 Cans diced tomatoes
  • 1 jalapeño pepper
  • salt to taste

Instructions
 

  • 1. In a large bowl, put the dried tomatoes with water and the canned tomatoes, undrained. Chop with a blender/mixer until mushy.
    2. Brown the hot pepper and garlic in the olive oil.
    3. Add the tomato mixture to the pan and stir briskly.
    4. Add the spices, capers, and black olives. Cook the sauce briskly for 5 minutes.
    5. Reduce the heat to low and simmer the sauce for 15-20 minutes.
    6. Add the cubed tuna and cook until the tuna just falls apart.
    7. Stir in the chopped parsley.
    8. Serve the sauce immediately.
    Note:
    – If you prefer, you can simmer the sauce until you are ready to eat, adding the cubed tuna at the last possible moment.
    – This pasta sauce is prepared when there is an argument over how to serve the catch of the day after a fishing trip. Some prefer pasta, while others prefer steaks. In this case, a portion of the catch would be prepared as steaks, and the rest would be cubed for the pasta sauce.
