Tiramisu
Ingredients
- 6 egg yolks
- ¾ Cup granulated sugar
- ⅔ Cup milk
- 1 ¼ Cups heavy cream
- 8 Oz mascarpone cheese
- 1 Tsp vanilla extract
- 24 ladyfinger cookies
- 1 Cup strong brewed coffee cooled
- 2 Tbsp cocoa powder for dusting
Instructions
- In a heatproof bowl, whisk together the egg yolks and sugar until well combined.
- Place the bowl over a saucepan of simmering water, making sure the bottom of the bowl doesn’t touch the water.
- Gradually whisk in the milk and cook the mixture, stirring constantly, until it thickens and coats the back of a spoon. Remove from heat and let cool.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the mascarpone cheese and vanilla extract into the cooled egg yolk mixture until smooth.
- Fold in the whipped cream until well combined.
- Dip each ladyfinger cookie into the cooled coffee and arrange a layer of dipped cookies in the bottom of a serving dish or individual serving glasses.
- Spoon a layer of the cream mixture over the cookies.
- Repeat the layers, finishing with a layer of the cream mixture on top.
- Cover and refrigerate for at least 4 hours or overnight to allow the flavors to meld.
- Just before serving, dust the top of the tiramisu with cocoa powder.
- Slice and serve chilled. Enjoy!
